01 / WHAT IT BUILT
What the company did
Nordic Umami Company was a Finnish food-tech startup that developed fermentation-based technology to extract natural umami flavor from plant-based industry by-products, turning edible side streams into clean-label flavoring ingredients for the food industry. Founded in January 2021 in Espoo by Outi Mäkinen, Reetta Kivelä, and Tytti-Lotta Ojala (led by CEO Eetu Viuhkonen), it launched its first product — the Meatless Umami Bouillon — for food service, partnered with Raisio to upcycle production side streams, and raised €2.6 million (a €1.8M seed led by Nordic Foodtech VC plus an €800K EU/Business Finland grant). The company later rebranded to BioMush, which unveiled a demo-scale bioreactor and solid-state fermentation technology.
