Mezli
The business, the turning points, and the decisions behind them.
01 / WHAT IT BUILT
What the company did
Mezli was a San Francisco robot-restaurant startup founded by Stanford engineers Alex Kolchinski, Alex Gruebele and Max Perham with Michelin-star chef Eric Minnich. The team began full-time work in January 2021 while in Y Combinator's W21 batch, raised a $3.5 million seed round in April 2021 (backers included roboticist Pieter Abbeel), and in August 2022 launched what it billed as the world's first fully autonomous restaurant: a 250-square-foot unit in the Spark Social food park in San Francisco's Mission Bay serving customizable, on-demand Mediterranean grain bowls starting at $6.99 with no humans required on site - customers ordered at touchscreen kiosks and picked up at smart lockers. The fall of 2022 was a technical success: about 10,000 meals served, over 50% return customers, 99%+ uptime, under two hours of daily labor, 75 meals per hour at a capacity of 250-300 meals between service visits, and NSF Field Label approval from the San Francisco Department of Public Health.
02 / Mezli FAILURE REASONS
Failure reasons
Mezli proved the technology but could not survive the economics of scaling it. The unit worked: it served ~10,000 meals that fall with over 50% repeat customers and 99%+ uptime at a rate of 75 bowls an hour. But each unit was high-capex hardware - the first cost $450,000 to build, the second was projected at $250,000 - and scaling the chain required raising a $14 million Series A in January 2023 to design the unit for manufacture and build a hub-and-spoke expansion. With the funding market and interest rates turning against capital-intensive hardware, the round never closed. The team explored a B2B2C play serving other chains' menus and considered smaller, cheaper units, but the runway ran out and Mezli shut down in the summer of 2023.
