01 / WHAT IT BUILT
What the company did
Gastrograph AI (formerly Analytical Flavor Systems) was a New York City startup founded in 2010 by CEO Jason Cohen, building predictive AI for food and beverage companies. It collected flavor, aroma and texture data from professional tasters across hundreds of variables, and used machine learning to predict how different demographics would react to new products and to suggest reformulations. The company raised about $11.1 million, including a $4 million Series A in November 2018 led by Better Food Ventures and a $7 million venture round in January 2023 led by Leawood VC and Sony Innovation Fund. In April 2025 NielsenIQ (NIQ) signed a definitive agreement to acquire it.
